For YouTube.

I have private videos, and apparently I cannot download them using JD2. If I made them unlisted, will I then be able to download them?

Thanks

You have to add your Youtube account to JDownloader, then you should be able to download your own unlisted videos

If I insert my password, will it be in danger of being stolen?

You should always (independent of JDownloader) use strong/different password and if possible 2fa.
Youtube account support is done via cookies only.
If someone has access to your JDownloader/Computer, he/she can *steal* anything. But most services require access
to mail too in ordner to change mail/password...
