There is an Issue with FFmpeg standard settings. Audio with higher resolution, 192kbit etc will be always converted to 128kbit. The advanced settings seem alright. How can i fix it?

JDownloader doesn't convert at all. Given bitrate is VBR with max. 192 kbit/s, and the resulting average is most often 128 kbit/s. You can enable Settings-Advanced Settings-Youtube.doextendedaudiobitratelookupenabled

I found out that Youtube doesn't support 192kbps, the maximum form AAC is 128kbps. Many Uploaders advertise it wrongly. I was just wondering, why JDownloader is shrinking AAC files to a 5 times smaller size. What will be cut out?

JDownloader doesn't shink/cut/convert. It only muxes the streams.
