All of the video pages seem to follow the structure of sitename/pagename. Page view-source doesn't reveal any mpg, av1, mkv (etc) links, so they're hiding them well.

They're not hiding them at all.
The videos are hosted on vimeo and embedded. You can either copy them from the html source of the website or let JD deep-parse the URL you posted or even create a custom LinkCrawler Rule so JD will only look for those vimeo.com URLs whenever you're adding such "watchdocumentaries.com" URLs. -psp-
